Fake Bolognese

This meat sauce goes great on spaghetti, rigatoni or even in a lasagna. Its not really italian but its pretty damn delish.

Most people like to use ground beef to make this sauce but a blend that includes veal and pork makes it even better. Sometimes, I just empty a few spicy italian sausages instead. For a leaner sauce, use ground chicken or turkey. You can make your turkey taster 'beefier' by adding 2 tablespoons of beef stock concentrate while youre cooking it. Deglazing the bottom of your pot with red wine will also improve the final result.

While in italy they only use tomatoes, garlic and onion in their traditionnal bolognese sauce, I prefer adding more vegetables. Its a healtier recipe and it also has more texture.

I suggest that you double this recipe and freeze small portions for those days when youre too tired to cook but you dont want to eat junk food delivery. Then you just have to boil some pasta and microwave a tupperware of your sauce.

List of Ingredients:
1 lb ground meat of your choice
2 medium carrots
2 ribs of celery
1 large onion
3 to 5 cloves of garlic
half a green bell pepper
5 or 6 mushrooms
fresh parsley to taste
2 cans of diced tomatoes (12 oz)
olive oil
red wine (optionnal)
Seasonnings: 1 tbsp each of salt, pepper, basil, oregano, thyme, rosemary, marjoram, savory, sugar, worcestershire sauce, ground chili flakes and 3 bay leaves

  1. Very nice Blog Also...Wasn't sure if you got my tip on putting a wet towel under your cutting board. Stop it from sliding. I'm a pastry guy..What do you like for dessert?

  2. @BIG SKY CHEF - I usually always put a kitchen cloth under my board and the one time I forget it, I cut myself! I had not cut myself in years so I guess its a good average! I used to work as a pastry chef too! My favorite cake is black forest but I also love lemon tarts to death.
