These potatoes go well with anything! It's a super easy sidedish that you can make any day of the week but looks fancy enough for a week end meal with guests. You may use any kind of potato to make this recipe. It will always turn out fantastic as long as you blanche them before putting them in the oven. Why do the extra step? Because when you boil them, some starch will be released and thats how you get the inside soft and the outside golden brown. I encourage you to use fresh herbs but if you only have the dry stuff, its perfectly fine too. Pretty much any herbs will taste good so feel free to experiment and find out what blend is your favorite. Mine is rosemary-thyme-oregano.
