French Onion Soup - Soupe à l'oignon Gratinée

Oui, oui! Je t'aime! If you're looking to impress, this recipe will certainly do it. I think the best onion to make this soup is vidalia but you can use any onions you like. This recipe also calls for some white wine but you can avoid it and simply replace it with water or stock. Some people put bread at the bottom of the soup but I find that it makes it too soggy and unapealing. If you don't have swiss cheese you can use mozarella or cheddar, any firm cheese that you can shred. This looks very fancy but its actually pretty simple and straight forward and it won't hurt your wallet. I hope you try it at home!

List of ingredients:
1 large vidalia onion, 3 cloves of garlic, 3 tbsp butter, 1 tsp sugar, 1/2 tsp dried thyme, 1 bay leaf , salt and pepper, 1 tsp dijon mustard, 3/4 cup white wine, 1 1/2 cup beef and chicken stock, 1 cup gruyere swiss cheese, a few slices of toasted baguette bread
