Herb Roasted Chicken with Gravy and Vegetables

Cooking a whole chicken is easier than it seems and there are so many things to do with leftover meat: soup, salad, sandwiches, fried rice and more! This recipe here is pretty basic so you can modify it to your personnal likings. If you only have dry herbs its fine but I always encourage you to use the fresh ones if you have access to them because they are much more fragrant and flavorful. You can baste the chicken while its cooking but its not necessary since theres olive oil to keep the meat moist and tender. Also, dont forget to make sure to have water on the bottom at all times, otherwise, you may have a nasty burnt dish and there wont be enough liquid to make the gravy. Happy Cooking!

List of Ingredients:
1 whole chicken (about 2 pounds)
5 cloves of garlic
3 large potatoes
6 large carrots
1/3 cup olive oil
1/4 cup lemon juice
1 tsp thyme
1 tsp oregano
1 tsp basil
1 tsp rosemary
1tsp salt
1tsp pepper
1tbsp honey
