Café Mocha Cupcakes

The delicious taste of coffee and chocolate inside a fluffy cupcake.. MmMmMm :) You can avoid the rolled oats and just replaced them with flour if you dont like that kind of texture. You want to make sure your coffee is as strong as possible for maximum flavor. If you don't have butter, you can replace that with margerine. Finally, you can skip the nuts or change them! Have fun with this recipe and make it your own.

List of ingredients:
1/4cup soft butter(1/2 stick)
1/2 cup brown sugar
2 large eggs
3 tbsp cocoa powder or chocolate milk mix
1 cup flour
1 teaspon baking powder
1/4 teaspoon salt
1/2 cup rolled oats
1 cup strong coffee
cooking spray
almonds
1 teaspoon each of cinnamon and granulated sugar combined for topping

Crispy Macaroni and Cheese with Bacon Recipe

Here, Im using the fat from the bacon the create a roux for the cheese sauce and its delicious. I served it with some colored carrots on the side.

List of Ingredients:
1 1/2 cup of pasta
8 slices of bacon, chopped in small pieces
1 large challot, minced
1 tbsp of flour
1 cup of 2% milk
1 1/4 cup of shredded cheese (save 1/4 cup for the top)
2 tbps grated parmesan
1/3 cup of panko (japanese bread crumbs)

Spanish Rice My Way

1/2 cup green bell pepper
