Fresh lime juice, chilies and garlic make this chicken tender and incredibly flavorful!
You may leave the meat to marinate for about 1 hour but I suggest overnight for a more pungeant taste. Here Im using breasts but you could also use thighs or drumsticks.You can also cut the breasts and put them on skewers if you would rather gril them than cook them in the oven.
You can serve this chicken recipe with rice, potatoes, a nice salad or anything you want really. If you have leftovers, wich I doubt unless you make a large amount, it will make a terrific chicken salad for lunch the following day.

4 chicken breasts
1 lime
1 shallot
3 cloves of garlic
2 thai chilies
1/4 cup olive oil
any herbs you like
salt and pepper to taste
a squirt of honey (optionnal)
