Easy Salmon Croquette Recipe

This recipe was requested by one of my subscribers on youtube: enokiatgmail. He asked for a fish recipe and I had not done any fish yet on the show so I accepted. I am now taking requests and ideas through my youtube channel's moderator module. I am using fresh salmon in this recipe because I wanna show people how to cook it but you could also use a can if thats more convienant or affordable for you. I dont recommend using instant mashed potatoes because they are too soft and it would crumble apart. You can replace the green onions with chives or green garlic and the panko with regular bread crumbs. They go perfectly with any vegetables you want on the side. If you want a dipping sauce to go with it, just add a squeeze of lemon juice in a couple tablespoons of mayo. I hope you try it yourself and enjoy!

Ingredients (for 2 people)
1/2 pound piece of salmon
2 potatoes
2 green onions
panko
salt and pepper to taste
cayenne pepper
lemon (for presentation and juice)

***Keep in mind that you want to have roughly the same amount of fish and potato to make sure the patties dont crumble when you brown them in the skillet.
