Chili with habanero and bacon

Hot! Hot! Hot! Habanero chilies are some of the hottest in the world and Im using them in this chili recipe. If you don't want it as spicy you can replace them with jalapenos. Also here you will see I chose a beef shank. They are cheap and delicious when simmered in a sauce. You will have to remove it after it's cooked to cut it in small pieces. If that seems too complicated you can just use regular ground beef or stewing beef cubes. Paula Deen says you dont need a recipe for chili, you make it any way you want. Here's my version.



List of ingredients
1/2 pound bacon
1/2 large spanish onion
1/2 cup of each green, yellow and red bell peppers
4 cloves of garlic
2 habanero (for more heat, leave the seeds in)
1 large can of crushed tomatoes (+ water)
1 can or red kidney beans
maple syrup to taste (or any other sugar)
1 beef shank                                                                                  
1 tsp cumin
1 bay leaf
1 tsp chili powder
1 tsp oregano
1tsp salt
1tsp pepper
1/4 tsp ground cloves
a handfull of fresh cilantro
**optionnal ** sharp cheddar and sour cream for topping
